Ingredients:
5 Basil leaves (each)
5 Mint leaves (each)
½ Lime (each, quartered)
350ml Coconut water (frozen overnight in ice cube trays)
500ml BWG Pineapple Punch
300ml Sprite
¼ Cup sugar
¼ Cup water
¼ Teaspoon rum extract
Preparation:
In a small bowl, combine water and sugar until dissolved.
Microwave on high for 1 minute.
Stir and add rum extract.
Set to side and allow to cool.
Break up herb leaves and distribute into two glasses.
Squeeze lime juice into glasses as well.
Take frozen coconut water out of ice cube trays and place into 2 tall glasses.
Shake Pineapple Punch and pour 125ml (quarter bottle) into each glass.
Top each glass with sprite.
Finish off with rum simple syrup.
Garnish with pineapple slice and lime
Recipe Notes
If you are not the biggest fan of a coconut flavour, just omit the coconut water. Frozen pineapple chunks could take the place of the coconut ice cubes and they too keep the drink cold without watering it down.
