Recipe
 Serves: 2
Ingredients:
60ml Blanco Tequila
250ml BWG Lemon Punch
Lime Juice - a squeeze
Angostura Bitters - a dash or two
1 egg white / *2 tablespoons aquafaba for vegan alternative
Preparation:
Add all the ingredients to a cocktail shaker without ice and shake for 20 seconds.
This will help the egg white / aquafaba to foam.
Add some ice into the shaker and give a good shake for another 30 seconds.
Strain into some old-fashioned glasses and garnish off with a twist of lime and a cherry on a cocktail stick.
Recipe Notes
How to get the very best egg white foam? It’s called a Dry Shake. That means you’ll shake the ingredients first without ice. This lets the protein in the egg begin to unravel and form foam instead of being diluted by the ice.
Use aquafaba instead of the egg white as a vegan alternative.
Why not leave out the bitters and egg white foam, and instead, add some lime juice and Cointreau (orange liqueur) and voila! You have a margarita!
