Spicy Tomato Cucumber Smoothie

Intro & Description

A lovely ripe tomato contains lutein (good for the eyes), and vitamins A, B, C and E.  It is also packed with lycopene, an antioxidant that helps prevent cancer. Coupled with our cucumber punch and a few other flavourful ingredients and you have a winner!

A fresh smoothie a little spice-kick for in between meals.

 

Recipe

 Serves: 2

Ingredients:

  • 1 Medium firm, ripe tomato, coarsely chopped

  • 1½ Cups tomato juice, well chilled

  • 250ml BWG Cucumber Punch

  • 1 Small clove garlic, chopped

  • ½ Teaspoon table salt

  • ½ Teaspoon black pepper

  • ⅛ Teaspoon red (cayenne) pepper

  • ¼ Teaspoon ground cumin

  • 2 Tablespoon fresh lime juice

  • ½ Cup ice (optional)

Preparation:

  1. Place all ingredients in a blender. 

  2. Blend until smooth, for about 30 - 60 seconds. 

  3. Divide mixture between 2 on-the-rocks glasses. 

  4. Top off with any of the garnish ingredients, if desired, just before serving.

 

Recipe Notes

Garnish suggestions: Lime wedges, Cherry tomatoes, Cucumber spears, Celery stalks.

This healthy smoothie would be a good start your day.  Unless you replace the ice with vodka.  Then it will be a great start to your day.

This recipe can be made ahead! Chill, covered, for up to a day. Whisk before serving.

Keep your smoothies really cold. As our taste buds are temperature sensitive, we can’t taste the full dimension of flavors when drinks are ice cold. This temperature phenomenon takes the edge off the pungency of leafy greens and earthy foods.
