Frozen Watermelon Daiquiri

If there’s anything more refreshing than an ice cold wedge of watermelon, it’s a watermelon cocktail. Combined with rum and fresh lime, a Frozen Watermelon Daiquiri is the perfect way to cool down on a summer afternoon. It’s even better sipped poolside!
This easy frozen cocktail recipe is summer party ready!
Recipe
 Serves: 4
Ingredients:
1L BWG Watermelon Punch
500g Fresh watermelon cubes
150ml Coconut rum
3 to 4 Tablespoons sugar (to taste)
2 Tablespoons freshly squeezed lime juice
Preparation:
Lay watermelon cubes on a piece of waxed paper on a flat tray and freeze until hard.
Start the first step in the morning so by late afternoon you are ready to continue.
Add the liquid ingredients and half of the watermelon cubes to a blender.
Blend until silky smooth
The remaining watermelon cubes can now be added evenly to some hiball glasses.
Pour in the liquid blend.
Keep a couple of watermelon cubes aside for a rim garnish if desired.
Recipe Notes
To freeze watermelon, lay chopped pieces on a parchment paper-lined sheet in a single layer. Freeze until hard, then transfer to a freezer-safe container or baggie until you need them.
Store leftover Watermelon Daiquiri in the freezer in an airtight container.
