Cardamom and Beetroot Smoothie Sundae

This healthy vegan smoothie is packed full of vitamins and will give you a gentle kick with the help of eastern spices. Fresh beetroot punch add nutrients, flavour and a burst of colour to this creamy, citrusy smoothie.

Recipe

 Serves: 2

Ingredients:

  • 250ml BWG Beetroot Punch

  • 125ml coconut milk (chilled)

  • 1 banana

  • 2 cardamom seeds

  • Ice

  • 1 teaspoon vanilla extract

  • 1 pinch sea salt

  • 2 tablespoons lemon juice (freshly squeezed)

  • Cacao nibs (or sesame seeds, to garnish, optional)

Preparation:

  1. Blend the Beetroot Punch with two-thirds of the banana and all of the remaining ingredients until completely smooth. 

  2. Slice the remaining banana. 

  3. Divide the smoothie between two tall glasses. 

  4. Garnish with the banana slices and a sprinkling of sesame seeds or cacao nibs. 

 

Recipe Notes

To get to the cardamom seeds, split the pod by crushing it with the flat blade of a knife and remove two seeds. Alternatively, use a pinch of ground cardamom.

Add an avocado to the mix, and you’ll be amazed at how rich and creamy your smoothie becomes.

Use a frozen, super ripe banana to really bring out the sweetness in this snack.

Add a small amount of fresh ginger for a surprising kick with every sip.
