Quirky Carrot Mocktail
Intro & Description
This Quirky Carrot Mocktail is a great way to celebrate Spring Time and the perfect drink to serve at your Easter Brunch! Great for all ages and so very delicious…almost like having a Carrot Cake in a glass. Mildly sweet with a wonderful coconut essence. How fabulous will these look at any table!
They are quick and easy to make and so delicious to drink!
Recipe
Ingredients:
250ml BWG Carrot Punch
2 Tablespoons evaporated coconut milk
2 Tablespoons roasted coconut syrup
⅛ Teaspoon grated cinnamon
3 Tablespoons non-dairy whip cream
Wheatgrass garnish
Preparation:
In a mixing glass combine the Carrot Punch, roasted coconut syrup, evaporated coconut milk, and grated cinnamon.
Mix well.
Pour mixture over ice in a tall serving glass, leaving about 10cm from the rim of the glass.
Top with non-dairy whip cream and level the top by running the edge of a butter knife across the rim.
Arrange wheatgrass across the whipped cream.
Serve.
Recipe Notes
If you are not the greatest fan of coconut, replace the coconut cream with yogurt, and add some simple syrup, or agave syrup instead.
Cinnamon will give this mocktail an earthy essence, however you could replace this with nutmeg, or even add some whole walnuts for that true “carrot cake” flavour.
If the dairy whip is not your thing, leave out this step altogether.
