Frozen Watermelon Coconut Mojito

The classic Mojito gets a refresh with watermelon punch and creamy coconut milk. Garnish this frozen fruity slushy with shredded coconut, lime wedges, mint sprigs, and watermelon wedges and enjoy it poolside or at your next warm weather event.

Ingredients:

  • 250ml BWG Watermelon Punch

  • 1 Can full cream coconut milk

  • 60ml Freshly squeezed lime juice

  • 15-20 Mint leaves

  • 90ml Coconut rum

Preparation:

  1. Add all of the ingredients to a blender with a cup of ice blocks. 

  2. Blend until smooth but still slushy. 

  3. Pour into 2 tall glasses and garnish with a wedge of watermelon and lime and a dusting of shredded coconut. 

Recipe Notes

Dip the rims of the glasses in the water and sprinkle some desiccated coconut on for that extra special touch. Pour the drinks in and then top with a lime wedge and a watermelon wedge and sprig of mint.
