Cardamom and Beetroot Smoothie Sundae

Recipe
Ingredients:
250ml BWG Beetroot Punch
125ml coconut milk (chilled)
1 banana
2 cardamom seeds
Ice
1 teaspoon vanilla extract
1 pinch sea salt
2 tablespoons lemon juice (freshly squeezed)
Cacao nibs (or sesame seeds, to garnish, optional)
Preparation:
Blend the Beetroot Punch with two-thirds of the banana and all of the remaining ingredients until completely smooth.
Slice the remaining banana.
Divide the smoothie between two tall glasses.
Garnish with the banana slices and a sprinkling of sesame seeds or cacao nibs.
Recipe Notes
To get to the cardamom seeds, split the pod by crushing it with the flat blade of a knife and remove two seeds. Alternatively, use a pinch of ground cardamom.
Add an avocado to the mix, and you’ll be amazed at how rich and creamy your smoothie becomes.
Use a frozen, super ripe banana to really bring out the sweetness in this snack.
Add a small amount of fresh ginger for a surprising kick with every sip.
